Ingredients

  • Sliced baguette - 4 slices
  • Olive oil - 2 tablespoons
  • Fresh mushrooms (button or cremini) - 200 grams, sliced
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they are softened and have released their moisture.
  4. Stir in the chopped parsley, thyme, salt, and pepper. Cook for an additional 2 minutes, then remove from heat.
  5. While the mushrooms are cooking, brush both sides of the baguette slices with the remaining olive oil and place them on a baking sheet.
  6. Toast the baguette slices in the preheated oven for about 5 minutes, or until golden brown.
  7. Remove the baguette from the oven and top each slice with the mushroom mixture. If using, sprinkle grated Parmesan cheese on top.
  8. Return to the oven and bake for an additional 5 minutes, until the cheese is melted and bubbly.
  9. Serve warm, garnished with extra parsley if desired.
