Ingredients

  • Gluten-free bread - 4 slices
  • Ripe heirloom tomatoes - 300 grams, sliced
  • Fresh basil leaves - 10 grams, torn
  • Extra virgin olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Garlic clove - 1, minced
  • Sea salt - to taste
  • Freshly cracked black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Place the gluten-free bread slices on a baking tray and lightly drizzle with 1 tablespoon of olive oil.
  3. Toast the bread in the oven for about 5-7 minutes, or until golden and crispy.
  4. While the bread is toasting, in a bowl, combine the sliced heirloom tomatoes, minced garlic, torn basil leaves, balsamic vinegar, remaining olive oil, sea salt, and black pepper. Mix gently to coat the tomatoes.
  5. Once the bread is toasted, remove it from the oven and let it cool slightly.
  6. Top each slice of bread generously with the tomato mixture.
  7. If desired, sprinkle crumbled feta cheese on top of the tomatoes.
  8. Serve immediately, garnished with extra basil leaves if desired.
