- Gluten-free bread - 4 slices
- Ripe heirloom tomatoes - 300 grams, sliced
- Fresh basil leaves - 10 grams, torn
- Extra virgin olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Garlic clove - 1, minced
- Sea salt - to taste
- Freshly cracked black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 180°C (350°F).
- Place the gluten-free bread slices on a baking tray and lightly drizzle with 1 tablespoon of olive oil.
- Toast the bread in the oven for about 5-7 minutes, or until golden and crispy.
- While the bread is toasting, in a bowl, combine the sliced heirloom tomatoes, minced garlic, torn basil leaves, balsamic vinegar, remaining olive oil, sea salt, and black pepper. Mix gently to coat the tomatoes.
- Once the bread is toasted, remove it from the oven and let it cool slightly.
- Top each slice of bread generously with the tomato mixture.
- If desired, sprinkle crumbled feta cheese on top of the tomatoes.
- Serve immediately, garnished with extra basil leaves if desired.
