- sardines in olive oil - 1 can (120g)
- baguette - 1 small (about 250g)
- butter - 20g
- fresh parsley - 2 tablespoons, chopped
- lemon - 1, zested and juiced
- capers - 1 tablespoon, rinsed and drained
- sea salt - to taste
- black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Slice the baguette in half lengthwise and then into two pieces to create open-faced sandwiches.
- Spread the butter evenly on each half of the baguette.
- Place the baguette halves on a baking sheet and toast in the oven for about 5-7 minutes or until golden brown.
- While the bread is toasting, open the can of sardines and drain the oil.
- In a bowl, combine the sardines, chopped parsley, lemon zest, lemon juice, capers, sea salt, and black pepper. Gently mash the ingredients together with a fork until well mixed but still chunky.
- Once the baguette is toasted, remove it from the oven and spoon the sardine mixture generously onto each half.
- Serve immediately, garnished with additional parsley if desired.
