Ingredients

  • sardines in olive oil - 1 can (120g)
  • baguette - 1 small (about 250g)
  • butter - 20g
  • fresh parsley - 2 tablespoons, chopped
  • lemon - 1, zested and juiced
  • capers - 1 tablespoon, rinsed and drained
  • sea salt - to taste
  • black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the baguette in half lengthwise and then into two pieces to create open-faced sandwiches.
  3. Spread the butter evenly on each half of the baguette.
  4. Place the baguette halves on a baking sheet and toast in the oven for about 5-7 minutes or until golden brown.
  5. While the bread is toasting, open the can of sardines and drain the oil.
  6. In a bowl, combine the sardines, chopped parsley, lemon zest, lemon juice, capers, sea salt, and black pepper. Gently mash the ingredients together with a fork until well mixed but still chunky.
  7. Once the baguette is toasted, remove it from the oven and spoon the sardine mixture generously onto each half.
  8. Serve immediately, garnished with additional parsley if desired.
