- Cornichons - 50 grams, for garnish
- Fresh parsley - for garnish
Steps
- In a saucepan, heat olive oil over medium heat and sauté the chopped onion, carrot, and garlic until softened, about 5 minutes.
- Add the pork tenderloin, thyme, bay leaf, salt, and pepper to the pan, then cover with water.
- Bring to a simmer, cover, and cook for about 60 minutes, until the pork is tender.
- Remove the pork from the pot and let it cool slightly, then shred the meat using two forks.
- Return the shredded pork to the saucepan, mix it with the vegetables, and simmer for an additional 10 minutes.
- Remove the bay leaf and let the rillettes cool to room temperature.
- Toast the slices of whole grain baguette until golden brown.
- Spread the rillettes generously on the toasted baguette slices and garnish with cornichons and fresh parsley.
