  • Thyme - 1 teaspoon, fresh or dried
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole grain baguette - 1 small, sliced
  • Cornichons - 50 grams, for garnish
  • Fresh parsley - for garnish

Steps

  1. In a saucepan, heat olive oil over medium heat and sauté the chopped onion, carrot, and garlic until softened, about 5 minutes.
  2. Add the pork tenderloin, thyme, bay leaf, salt, and pepper to the pan, then cover with water.
  3. Bring to a simmer, cover, and cook for about 60 minutes, until the pork is tender.
  4. Remove the pork from the pot and let it cool slightly, then shred the meat using two forks.
  5. Return the shredded pork to the saucepan, mix it with the vegetables, and simmer for an additional 10 minutes.
  6. Remove the bay leaf and let the rillettes cool to room temperature.
  7. Toast the slices of whole grain baguette until golden brown.
  8. Spread the rillettes generously on the toasted baguette slices and garnish with cornichons and fresh parsley.
