Ingredients

  • Whole grain bread - 2 slices
  • Fresh fish fillet (e.g., salmon or trout) - 150 grams
  • Greek yogurt - 50 grams
  • Fresh dill - 5 grams, chopped
  • Lemon juice - 1 tablespoon
  • Cucumber - 50 grams, thinly sliced
  • Cherry tomatoes - 50 grams, halved
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a non-stick skillet over medium heat and lightly coat with olive oil.
  2. Season the fish fillet with salt and black pepper, then place it in the skillet. Cook for about 4-5 minutes on each side or until the fish is cooked through and flakes easily with a fork.
  3. While the fish is cooking, mix the Greek yogurt, chopped dill, and lemon juice in a small bowl to create a creamy sauce.
  4. Once the fish is done, remove it from the skillet and let it rest for a minute before flaking it into bite-sized pieces.
  5. Toast the whole grain bread slices in the same skillet until golden brown.
  6. Spread the dill yogurt sauce evenly over each slice of toasted bread.
  7. Top the yogurt-covered bread with the flaked fish, cucumber slices, and halved cherry tomatoes.
  8. Drizzle a little more olive oil over the top if desired, then serve immediately.
