  • Baguette - 1 small
  • Zucchini - 100 grams
  • Red bell pepper - 100 grams
  • Eggplant - 100 grams
  • Cherry tomatoes - 100 grams
  • Olive oil - 3 tablespoons
  • Garlic - 1 clove, minced
  • Fresh basil - 10 grams, chopped
  • Feta cheese - 50 grams, crumbled
  • Capers - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Slice the zucchini, red bell pepper, and eggplant into thin strips.
  3. In a large bowl, combine the sliced vegetables with olive oil, minced garlic, salt, and black pepper. Toss until well coated.
  4. Grill the vegetables for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.
