- Baguette - 1 small
- Zucchini - 100 grams
- Red bell pepper - 100 grams
- Eggplant - 100 grams
- Cherry tomatoes - 100 grams
- Olive oil - 3 tablespoons
- Garlic - 1 clove, minced
- Fresh basil - 10 grams, chopped
- Feta cheese - 50 grams, crumbled
- Capers - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the grill or grill pan over medium heat.
- Slice the zucchini, red bell pepper, and eggplant into thin strips.
- In a large bowl, combine the sliced vegetables with olive oil, minced garlic, salt, and black pepper. Toss until well coated.
- Grill the vegetables for about 10-12 minutes, turning occasionally, until they are tender and have nice grill marks.
- While the vegetables are grilling, slice the baguette in half lengthwise and lightly toast it on the grill for about 2-3 minutes.
- Once the vegetables are done, remove them from the grill and let them cool slightly.
- Spread the grilled vegetables evenly over the toasted baguette halves.
- Sprinkle the crumbled feta cheese, chopped basil, and capers over the top.
- Drizzle with lemon juice before serving.
