Ingredients

  • Whole grain bread - 2 slices

  • Fresh basil - 10 grams, chopped
  • Fresh thyme - 5 grams, chopped
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 100 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine cherry tomatoes and zucchini with olive oil, balsamic vinegar, salt, and pepper.
  3. Spread the vegetable mixture on a baking sheet and roast in the oven for about 15 minutes, or until tender.
  4. While the vegetables are roasting, toast the slices of whole grain bread in a toaster or on a skillet until golden brown.
  5. Once the vegetables are done, remove them from the oven and let cool slightly.
  6. Spread the goat cheese evenly on the toasted bread slices.
  7. Top the goat cheese with the roasted cherry tomatoes and zucchini.
