Ingredients
- Potatoes - 400 grams, peeled and sliced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Mushrooms - 200 grams, sliced
- Vegan cream cheese - 100 grams
- Nutritional yeast - 2 tablespoons
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Vegan cheese - 100 grams, shredded (optional)
Steps
- Preheat the oven to 200°C (390°F).
- In a large pot, boil the sliced potatoes for about 10 minutes until just tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes until the mushrooms are browned. Season with thyme, salt, and black pepper.
- In a mixing bowl, combine the vegan cream cheese and nutritional yeast. Stir until smooth.
- In a baking dish, layer half of the potatoes, followed by the mushroom mixture, then spread the cream cheese mixture on top. Add the remaining potatoes, and if desired, sprinkle with vegan cheese.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until golden and bubbly.
