- Potatoes - 400 grams
- Reblochon cheese - 200 grams
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- White wine - 100 ml
- Heavy cream - 100 ml
- Thyme - 1 teaspoon, fresh or dried
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (390°F).
- Peel and slice the potatoes into thin rounds.
- In a large pot, bring salted water to a boil and add the sliced potatoes. Cook for about 10 minutes until just tender, then drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10-12 minutes. Add the minced garlic and cook for an additional minute.
- Pour in the white wine and simmer until it reduces by half, about 3-5 minutes.
- In a mixing bowl, combine the heavy cream, thyme, salt, and black pepper. Add the cooked potatoes and caramelized onion mixture, stirring gently to combine.
- Transfer the potato mixture to a baking dish and top with slices of reblochon cheese.
- Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
