Ingredients
- Potatoes - 400 grams
- Vegan cream - 150 ml
- Smoked vegan cheese - 150 grams
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Wash and peel the potatoes, then slice them thinly (about 3-4 mm thick).
- In a large pot, boil the sliced potatoes for about 10 minutes until slightly tender but not fully cooked. Drain and set aside.
- In a frying pan, heat the olive oil over medium heat and sauté the diced onion until soft and caramelized, about 10 minutes.
- Add the minced garlic and fresh thyme to the onions, cooking for another 2 minutes.
- In a mixing bowl, combine the boiled potatoes with the sautéed onions and garlic, adding salt and black pepper to taste.
- In a baking dish, layer half of the potato-onion mixture, then pour half of the vegan cream over it. Sprinkle half of the smoked vegan cheese on top.
- Add the remaining potato-onion mixture, pour the rest of the vegan cream, and top with the remaining smoked vegan cheese.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes or until the top is golden brown and bubbly.
