Ingredients

  • Potatoes - 500 grams
  • Goat cheese (soft) - 200 grams
  • Onion - 1 medium (about 150 grams)
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove
  • Thyme - 1 teaspoon (fresh or dried)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Peel and thinly slice the potatoes and set them aside in cold water to prevent browning.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and thyme to the onions, cooking for another 2 minutes until fragrant.
  5. Drain the potatoes and add them to the skillet. Stir to mix with the onions and garlic, then season with salt and pepper. Cook for about 10 minutes, stirring occasionally.
  6. In a baking dish, layer half of the potato mixture, then crumble half of the goat cheese on top. Repeat with the remaining potatoes and goat cheese.
  7. Pour the heavy cream evenly over the top layer.
  8. Cover the dish with foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, until the top is golden and bubbly.
  10. Let it cool for a few minutes before serving.
