- Potatoes - 500 grams
- Goat cheese (soft) - 200 grams
- Onion - 1 medium (about 150 grams)
- Heavy cream - 100 ml
- Olive oil - 1 tablespoon
- Garlic - 1 clove
- Thyme - 1 teaspoon (fresh or dried)
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 180°C (350°F).
- Peel and thinly slice the potatoes and set them aside in cold water to prevent browning.
- In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and thyme to the onions, cooking for another 2 minutes until fragrant.
- Drain the potatoes and add them to the skillet. Stir to mix with the onions and garlic, then season with salt and pepper. Cook for about 10 minutes, stirring occasionally.
- In a baking dish, layer half of the potato mixture, then crumble half of the goat cheese on top. Repeat with the remaining potatoes and goat cheese.
- Pour the heavy cream evenly over the top layer.
- Cover the dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
