Ingredients

  • Sweet potatoes - 300 grams
  • Quinoa - 100 grams
  • Reblochon cheese - 100 grams
  • Cooked bacon - 50 grams
  • Whole grain burger buns - 2 pieces
  • Fresh spinach - 50 grams
  • Red onion - 1 small, thinly sliced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Thyme - 1 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the sweet potatoes, then place them on a baking tray. Drizzle with olive oil, and season with salt, pepper, and thyme. Roast in the oven for 25 minutes until tender.
  3. While the sweet potatoes are roasting, cook the quinoa according to package instructions. Once cooked, fluff with a fork and set aside.
  4. In a bowl, mash the roasted sweet potatoes and mix in the cooked quinoa. Crumble in the Reblochon cheese and mix until well combined. Form this mixture into 2 patties.
  5. In a non-stick skillet, cook the bacon until crispy. Remove and drain on paper towels.
  6. In the same skillet, cook the sweet potato-quinoa patties for about 4-5 minutes on each side, until golden brown.
  7. To assemble the burger, place a sweet potato patty on each whole grain bun, top with crispy bacon, fresh spinach, and red onion slices.
  8. Serve immediately and enjoy your healthy Tartiflette Burger!
