Ingredients
- Sweet potatoes - 300 grams
- Quinoa - 100 grams
- Reblochon cheese - 100 grams
- Cooked bacon - 50 grams
- Whole grain burger buns - 2 pieces
- Fresh spinach - 50 grams
- Red onion - 1 small, thinly sliced
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Thyme - 1 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- Peel and cube the sweet potatoes, then place them on a baking tray. Drizzle with olive oil, and season with salt, pepper, and thyme. Roast in the oven for 25 minutes until tender.
- While the sweet potatoes are roasting, cook the quinoa according to package instructions. Once cooked, fluff with a fork and set aside.
- In a bowl, mash the roasted sweet potatoes and mix in the cooked quinoa. Crumble in the Reblochon cheese and mix until well combined. Form this mixture into 2 patties.
- In a non-stick skillet, cook the bacon until crispy. Remove and drain on paper towels.
- In the same skillet, cook the sweet potato-quinoa patties for about 4-5 minutes on each side, until golden brown.
- To assemble the burger, place a sweet potato patty on each whole grain bun, top with crispy bacon, fresh spinach, and red onion slices.
- Serve immediately and enjoy your healthy Tartiflette Burger!
