- Baby potatoes - 400 grams
- Reblochon cheese - 150 grams
- Smoked bacon or pancetta - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the barbecue to medium heat.
- Wash and halve the baby potatoes, then boil them in salted water for about 10-15 minutes until fork-tender. Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until soft and translucent, about 5 minutes.
- Add the smoked bacon or pancetta to the skillet and cook until crispy, about 5-7 minutes. Stir in the thyme and season with salt and black pepper.
- In a large bowl, combine the cooked potatoes with the bacon mixture, mixing gently to coat the potatoes evenly.
- Cut the Reblochon cheese into thick slices and layer it on top of the potato mixture in a cast iron skillet or grill-safe dish.
- Cover the dish with aluminum foil and place it on the barbecue grill. Cook for about 15-20 minutes until the cheese is melted and bubbling.
- Remove from the grill, let it cool for a couple of minutes, and serve hot.
