Ingredients

  • Potatoes - 400 grams
  • Reblochon cheese - 200 grams
  • Smoked bacon or pancetta - 100 grams
  • Onion - 1 medium
  • Garlic - 2 cloves
  • Fresh thyme - 1 teaspoon
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Preheat the barbecue to medium heat.
  2. Wash the potatoes and boil them in salted water for about 15 minutes until tender but still firm. Drain and let cool slightly.
  3. While the potatoes are boiling, chop the onion and garlic. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
  4. Add the smoked bacon or pancetta to the skillet and cook until crispy. Remove from heat and mix in the fresh thyme, and season with black pepper.
  5. Slice the boiled potatoes into rounds and add them to the skillet with the bacon mixture, gently stirring to combine.
  6. Transfer the potato mixture into a grill-safe dish, then slice the reblochon cheese in half horizontally and place it on top, rind side up.
  7. Cover the dish with aluminum foil and place it on the barbecue grill. Cook for about 20 minutes, or until the cheese is melted and bubbly.
  8. Once done, carefully remove the dish from the grill, let it cool for a minute, and serve hot.
