- Potatoes - 400 grams
- Reblochon cheese - 200 grams
- Smoked bacon or pancetta - 100 grams
- Onion - 1 medium
- Garlic - 2 cloves
- Fresh thyme - 1 teaspoon
- Black pepper - to taste
- Olive oil - 1 tablespoon
- Salt - to taste
Steps
- Preheat the barbecue to medium heat.
- Wash the potatoes and boil them in salted water for about 15 minutes until tender but still firm. Drain and let cool slightly.
- While the potatoes are boiling, chop the onion and garlic. In a skillet, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the smoked bacon or pancetta to the skillet and cook until crispy. Remove from heat and mix in the fresh thyme, and season with black pepper.
- Slice the boiled potatoes into rounds and add them to the skillet with the bacon mixture, gently stirring to combine.
- Transfer the potato mixture into a grill-safe dish, then slice the reblochon cheese in half horizontally and place it on top, rind side up.
- Cover the dish with aluminum foil and place it on the barbecue grill. Cook for about 20 minutes, or until the cheese is melted and bubbly.
- Once done, carefully remove the dish from the grill, let it cool for a minute, and serve hot.
