Ingredients

  • All-purpose flour - 125 grams
  • Unsalted butter - 60 grams (cold and cubed)
  • Salt - 1/4 teaspoon
  • Cold water - 3-4 tablespoons
  • Olive oil - 1 tablespoon
  • Yellow onions - 300 grams (thinly sliced)
  • Garlic - 1 clove (minced)
  • Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
  • Egg - 1 large
  • Heavy cream - 100 ml
  • Gruyère cheese - 50 grams (grated)
  • Black pepper - to taste

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Add the cold butter and rub it in until the mixture resembles breadcrumbs.
  2. Add cold water, one tablespoon at a time, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  3. Heat the olive oil in a skillet over medium heat, add the sliced onions, and cook until softened and caramelized, about 15-20 minutes. Stir in the minced garlic and thyme, and cook for another 2 minutes. Remove from heat and let cool.
  4. Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit a small tart pan (approximately 20 cm in diameter). Press the dough into the pan and prick the bottom with a fork.
  5. In a bowl, whisk together the egg and heavy cream. Stir in the grated Gruyère cheese and season with black pepper.
  6. Spread the caramelized onion mixture evenly over the pastry crust. Pour the egg and cheese mixture on top.
  7. Bake in the preheated oven for 25-30 minutes or until the tart is set and golden brown on top. Let cool for a few minutes before slicing and serving.
