Ingredients
- All-purpose flour - 125 grams
- Unsalted butter - 60 grams (cold and cubed)
- Salt - 1/4 teaspoon
- Cold water - 3-4 tablespoons
- Olive oil - 1 tablespoon
- Yellow onions - 300 grams (thinly sliced)
- Garlic - 1 clove (minced)
- Fresh thyme - 1 teaspoon (or 1/2 teaspoon dried thyme)
- Egg - 1 large
- Heavy cream - 100 ml
- Gruyère cheese - 50 grams (grated)
- Black pepper - to taste
Steps
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold butter and rub it in until the mixture resembles breadcrumbs.
- Add cold water, one tablespoon at a time, mixing until a dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Heat the olive oil in a skillet over medium heat, add the sliced onions, and cook until softened and caramelized, about 15-20 minutes. Stir in the minced garlic and thyme, and cook for another 2 minutes. Remove from heat and let cool.
- Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit a small tart pan (approximately 20 cm in diameter). Press the dough into the pan and prick the bottom with a fork.
- In a bowl, whisk together the egg and heavy cream. Stir in the grated Gruyère cheese and season with black pepper.
- Spread the caramelized onion mixture evenly over the pastry crust. Pour the egg and cheese mixture on top.
- Bake in the preheated oven for 25-30 minutes or until the tart is set and golden brown on top. Let cool for a few minutes before slicing and serving.
