- Puff pastry - 200 grams
- Zucchini - 100 grams, thinly sliced
- Red bell pepper - 100 grams, diced
- Cherry tomatoes - 100 grams, halved
- Red onion - 50 grams, thinly sliced
- Egg - 1 large
- Heavy cream - 60 ml
- Grated cheese (Gruyère or similar) - 50 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh thyme - 1 teaspoon, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a floured surface and fit it into a 20 cm (8 inch) tart pan, trimming the edges.
- In a skillet, heat olive oil over medium heat. Add the sliced red onion and sauté for about 3-4 minutes until softened.
- Add the zucchini and red bell pepper to the skillet, cooking for another 5 minutes. Season with salt and black pepper.
- In a bowl, whisk together the egg, heavy cream, grated cheese, fresh thyme, and a pinch of salt and pepper.
- Spread the sautéed vegetables evenly over the puff pastry base.
- Pour the egg and cream mixture over the vegetables, making sure to cover them evenly.
- Arrange the halved cherry tomatoes on top, cut side up.
- Bake in the preheated oven for 25-30 minutes, or until the tart is golden brown and the filling is set.
- Allow the tart to cool for a few minutes before slicing and serving.
