Ingredients

  • Puff pastry - 200 grams
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Egg - 1 large
  • Heavy cream - 60 ml
  • Grated cheese (Gruyère or similar) - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh thyme - 1 teaspoon, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a floured surface and fit it into a 20 cm (8 inch) tart pan, trimming the edges.
  3. In a skillet, heat olive oil over medium heat. Add the sliced red onion and sauté for about 3-4 minutes until softened.
  4. Add the zucchini and red bell pepper to the skillet, cooking for another 5 minutes. Season with salt and black pepper.
  5. In a bowl, whisk together the egg, heavy cream, grated cheese, fresh thyme, and a pinch of salt and pepper.
  6. Spread the sautéed vegetables evenly over the puff pastry base.
  7. Pour the egg and cream mixture over the vegetables, making sure to cover them evenly.
  8. Arrange the halved cherry tomatoes on top, cut side up.
  9. Bake in the preheated oven for 25-30 minutes, or until the tart is golden brown and the filling is set.
  10. Allow the tart to cool for a few minutes before slicing and serving.
