- All-purpose flour - 150g
- Coconut oil - 60g (melted)
- Maple syrup - 30g
- Almond milk - 100ml
- Almond flour - 50g
- Cornstarch - 20g
- Vanilla extract - 1 tsp
- Salt - 1/4 tsp
- Fresh mixed fruits (strawberries, blueberries, kiwi) - 200g
- Powdered sugar (for dusting) - optional
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour, melted coconut oil, and maple syrup to form a dough. If the dough is too crumbly, add a little water until it holds together.
- Press the dough into a 20 cm (8 inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and refrigerate for 15 minutes.
- While the crust is chilling, prepare the almond custard. In a saucepan over medium heat, whisk together almond milk, almond flour, cornstarch, vanilla extract, and salt until smooth and thickened. Remove from heat and let cool slightly.
- Pour the almond custard into the chilled tart crust and smooth the top with a spatula.
- Bake in the preheated oven for 25 minutes, or until the crust is lightly golden.
- Allow the tart to cool completely before topping it with fresh mixed fruits.
- Slice the tart, dust with powdered sugar if desired, and serve.
