Ingredients

  • All-purpose flour - 150g
  • Coconut oil - 60g (melted)
  • Maple syrup - 30g
  • Almond milk - 100ml
  • Almond flour - 50g
  • Cornstarch - 20g
  • Vanilla extract - 1 tsp
  • Salt - 1/4 tsp
  • Fresh mixed fruits (strawberries, blueberries, kiwi) - 200g
  • Powdered sugar (for dusting) - optional

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour, melted coconut oil, and maple syrup to form a dough. If the dough is too crumbly, add a little water until it holds together.
  3. Press the dough into a 20 cm (8 inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and refrigerate for 15 minutes.
  4. While the crust is chilling, prepare the almond custard. In a saucepan over medium heat, whisk together almond milk, almond flour, cornstarch, vanilla extract, and salt until smooth and thickened. Remove from heat and let cool slightly.
  5. Pour the almond custard into the chilled tart crust and smooth the top with a spatula.
  6. Bake in the preheated oven for 25 minutes, or until the crust is lightly golden.
  7. Allow the tart to cool completely before topping it with fresh mixed fruits.
  8. Slice the tart, dust with powdered sugar if desired, and serve.
