- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Balsamic glaze - for drizzling (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to fit two small tartlet pans or ramekins.
- Place the rolled pastry into the tartlet pans, pressing down gently and trimming any excess pastry.
- In a bowl, mix the sliced tomatoes with minced garlic, olive oil, salt, and black pepper.
- Layer the sliced mozzarella cheese evenly over the pastry, followed by the seasoned tomato mixture.
- Sprinkle chopped basil over the top of the tomatoes.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the cheese is melted.
- Remove from the oven and let cool slightly before drizzling with balsamic glaze if desired.
