  • Fresh thyme - 1 teaspoon, chopped
  • Olive oil - 1 tablespoon
  • Low-fat cream cheese - 50 grams
  • Egg - 1, beaten
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese - 20 grams, grated

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to about 3mm thickness and cut into two circles (about 12 cm in diameter).
  3. Place the pastry circles into two tartlet pans, pressing them into the edges and trimming any excess pastry.
  4. In a skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent (about 2-3 minutes).
  5. Add the chopped mixed mushrooms and cook until they release their moisture and start to brown (about 5-7 minutes).
  6. Stir in the fresh thyme, salt, and pepper, cooking for an additional minute before removing from heat.
  7. In a bowl, mix the cooked mushroom mixture with the low-fat cream cheese until well combined.
  8. Spoon the mushroom mixture evenly into the pastry shells and smooth the tops.
  9. Brush the edges of the pastry with the beaten egg for a golden finish.
  10. Sprinkle the grated Parmesan cheese over the top of each tartlet.
  11. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
  12. Remove from the oven and let cool for a few minutes before serving.
