- Parmesan cheese - 20 grams, grated
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness and cut into two circles (about 12 cm in diameter).
- Place the pastry circles into two tartlet pans, pressing them into the edges and trimming any excess pastry.
- In a skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent (about 2-3 minutes).
- Add the chopped mixed mushrooms and cook until they release their moisture and start to brown (about 5-7 minutes).
- Stir in the fresh thyme, salt, and pepper, cooking for an additional minute before removing from heat.
- In a bowl, mix the cooked mushroom mixture with the low-fat cream cheese until well combined.
- Spoon the mushroom mixture evenly into the pastry shells and smooth the tops.
- Brush the edges of the pastry with the beaten egg for a golden finish.
- Sprinkle the grated Parmesan cheese over the top of each tartlet.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp.
- Remove from the oven and let cool for a few minutes before serving.
