Ingredients

  • apples - 3 medium (about 450g), peeled, cored, and quartered
  • brown sugar - 100g
  • vegan butter - 50g
  • cinnamon - 1 teaspoon
  • vanilla extract - 1 teaspoon
  • lemon juice - 1 tablespoon
  • all-purpose flour - 150g
  • plant-based milk (almond or soy) - 50ml
  • baking powder - 1 teaspoon
  • salt - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a frying pan, melt the vegan butter over medium heat. Add the brown sugar, cinnamon, and lemon juice, stirring until the sugar dissolves and a caramel forms.
  3. Add the quartered apples to the caramel and cook for about 10 minutes, stirring occasionally until they soften and caramelize slightly.
  4. Remove the pan from heat and stir in the vanilla extract. Transfer the apples and caramel into a greased 20cm (8-inch) round cake pan, spreading them out evenly.
  5. In a mixing bowl, combine the flour, baking powder, and salt. Gradually add the plant-based milk and mix until a soft dough forms.
  6. Roll out the dough on a floured surface until it is slightly larger than the cake pan. Place the dough over the apples, tucking the edges into the pan.
  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  8. Allow to cool for 5 minutes, then carefully invert the tart onto a serving plate. Serve warm.
