- apples - 3 medium (about 450g), peeled, cored, and quartered
- brown sugar - 100g
- vegan butter - 50g
- cinnamon - 1 teaspoon
- vanilla extract - 1 teaspoon
- lemon juice - 1 tablespoon
- all-purpose flour - 150g
- plant-based milk (almond or soy) - 50ml
- baking powder - 1 teaspoon
- salt - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a frying pan, melt the vegan butter over medium heat. Add the brown sugar, cinnamon, and lemon juice, stirring until the sugar dissolves and a caramel forms.
- Add the quartered apples to the caramel and cook for about 10 minutes, stirring occasionally until they soften and caramelize slightly.
- Remove the pan from heat and stir in the vanilla extract. Transfer the apples and caramel into a greased 20cm (8-inch) round cake pan, spreading them out evenly.
- In a mixing bowl, combine the flour, baking powder, and salt. Gradually add the plant-based milk and mix until a soft dough forms.
- Roll out the dough on a floured surface until it is slightly larger than the cake pan. Place the dough over the apples, tucking the edges into the pan.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
- Allow to cool for 5 minutes, then carefully invert the tart onto a serving plate. Serve warm.
