- Puff pastry - 200 grams
- Carrots - 150 grams, sliced
- Red onions - 100 grams, sliced
- Zucchini - 100 grams, sliced
- Cherry tomatoes - 100 grams, halved
- Olive oil - 2 tablespoons
- Maple syrup - 1 tablespoon
- Balsamic vinegar - 1 tablespoon
- Thyme - 1 teaspoon, fresh or dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat olive oil over medium heat. Add the sliced carrots and red onions, sautéing for about 5 minutes until they begin to soften.
- Add the zucchini, cherry tomatoes, thyme, salt, and black pepper to the skillet. Continue to cook for another 5-7 minutes, stirring occasionally until all vegetables are tender.
- Stir in the maple syrup and balsamic vinegar, cooking for another 2 minutes until the mixture is well combined and slightly caramelized.
- Remove the skillet from heat and let the vegetable mixture cool slightly.
- Roll out the puff pastry on a floured surface to fit your skillet size, about 1-2 cm larger than the skillet.
- Arrange the sautéed vegetables evenly in the skillet, then carefully place the rolled-out puff pastry over the vegetables, tucking the edges down inside the skillet.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and puffed.
- Remove from the oven and let it cool for about 5 minutes before inverting the tart onto a plate.
- Slice and serve warm.
