Ingredients

  • Puff pastry - 200 grams
  • Carrots - 150 grams, sliced
  • Red onions - 100 grams, sliced
  • Zucchini - 100 grams, sliced
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Balsamic vinegar - 1 tablespoon
  • Thyme - 1 teaspoon, fresh or dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced carrots and red onions, sautéing for about 5 minutes until they begin to soften.
  3. Add the zucchini, cherry tomatoes, thyme, salt, and black pepper to the skillet. Continue to cook for another 5-7 minutes, stirring occasionally until all vegetables are tender.
  4. Stir in the maple syrup and balsamic vinegar, cooking for another 2 minutes until the mixture is well combined and slightly caramelized.
  5. Remove the skillet from heat and let the vegetable mixture cool slightly.
  6. Roll out the puff pastry on a floured surface to fit your skillet size, about 1-2 cm larger than the skillet.
  7. Arrange the sautéed vegetables evenly in the skillet, then carefully place the rolled-out puff pastry over the vegetables, tucking the edges down inside the skillet.
  8. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and puffed.
  9. Remove from the oven and let it cool for about 5 minutes before inverting the tart onto a plate.
  10. Slice and serve warm.
