Ingredients

  • Cherry tomatoes - 250 grams
  • Puff pastry - 1 sheet (approximately 230 grams)
  • Olive oil - 2 tablespoons
  • Brown sugar - 1 tablespoon
  • Balsamic vinegar - 1 tablespoon
  • Fresh basil - 5 leaves, torn
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Goat cheese - 50 grams, crumbled (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and add the cherry tomatoes, cooking until they begin to blister, about 5-7 minutes.
  3. Sprinkle the brown sugar over the tomatoes, then add balsamic vinegar, salt, and black pepper. Cook for another 3-4 minutes until the mixture thickens slightly.
  4. Remove the skillet from heat and stir in the torn basil leaves. Let it cool for a few minutes.
  5. Grease a round tart pan with a bit of olive oil. Spread the tomato mixture evenly at the bottom of the pan.
  6. Roll out the puff pastry on a lightly floured surface and cut it into a circle slightly larger than the tart pan.
  7. Place the puff pastry over the tomatoes, tucking the edges down around the filling inside the pan.
  8. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up.
  9. Remove from the oven and let it cool for 5 minutes before inverting onto a serving plate.
  10. If desired, sprinkle crumbled goat cheese over the top before serving.
