- Olive oil - 2 tablespoons
- Brown sugar - 1 tablespoon
- Balsamic vinegar - 1 tablespoon
- Fresh basil - 5 leaves, torn
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Goat cheese - 50 grams, crumbled (optional)
Steps
- Preheat your oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat and add the cherry tomatoes, cooking until they begin to blister, about 5-7 minutes.
- Sprinkle the brown sugar over the tomatoes, then add balsamic vinegar, salt, and black pepper. Cook for another 3-4 minutes until the mixture thickens slightly.
- Remove the skillet from heat and stir in the torn basil leaves. Let it cool for a few minutes.
- Grease a round tart pan with a bit of olive oil. Spread the tomato mixture evenly at the bottom of the pan.
- Roll out the puff pastry on a lightly floured surface and cut it into a circle slightly larger than the tart pan.
- Place the puff pastry over the tomatoes, tucking the edges down around the filling inside the pan.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up.
- Remove from the oven and let it cool for 5 minutes before inverting onto a serving plate.
- If desired, sprinkle crumbled goat cheese over the top before serving.
