- Bell pepper (any color) - 1 medium, sliced
- Carrot - 1 medium, sliced
- Cherry tomatoes - 150 grams, halved
- Olive oil - 2 tablespoons
- Balsamic vinegar - 1 tablespoon
- Brown sugar - 1 tablespoon
- Fresh thyme - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat the olive oil over medium heat and add the sliced onions. Cook for about 5 minutes until they are soft and translucent.
- Add the sliced zucchini, bell pepper, and carrot to the skillet. Cook for another 5-7 minutes, stirring occasionally until the vegetables are slightly tender.
- Stir in the cherry tomatoes, balsamic vinegar, brown sugar, thyme, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes start to soften and release their juices.
- Remove the skillet from heat and carefully arrange the cooked vegetable mixture in an even layer at the bottom of a round oven-safe baking dish.
- Roll out the puff pastry and carefully place it over the vegetable mixture, tucking the edges down around the sides of the dish.
- Using a fork, poke a few holes in the pastry to allow steam to escape during baking.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed up.
- Remove from the oven and let it cool for a few minutes before carefully inverting the tart onto a serving plate.
- Serve warm, garnished with additional fresh thyme if desired.
