  • Puff pastry - 200 grams
  • Red onions - 2 medium, sliced
  • Zucchini - 1 medium, sliced
  • Bell pepper (any color) - 1 medium, sliced
  • Carrot - 1 medium, sliced
  • Cherry tomatoes - 150 grams, halved
  • Olive oil - 2 tablespoons
  • Balsamic vinegar - 1 tablespoon
  • Brown sugar - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat and add the sliced onions. Cook for about 5 minutes until they are soft and translucent.
  3. Add the sliced zucchini, bell pepper, and carrot to the skillet. Cook for another 5-7 minutes, stirring occasionally until the vegetables are slightly tender.
  4. Stir in the cherry tomatoes, balsamic vinegar, brown sugar, thyme, salt, and black pepper. Cook for an additional 3-4 minutes until the tomatoes start to soften and release their juices.
  5. Remove the skillet from heat and carefully arrange the cooked vegetable mixture in an even layer at the bottom of a round oven-safe baking dish.
  6. Roll out the puff pastry and carefully place it over the vegetable mixture, tucking the edges down around the sides of the dish.
  7. Using a fork, poke a few holes in the pastry to allow steam to escape during baking.
  8. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed up.
  9. Remove from the oven and let it cool for a few minutes before carefully inverting the tart onto a serving plate.
  10. Serve warm, garnished with additional fresh thyme if desired.
