- Fresh basil - 10 grams (chopped)
- Garlic - 1 clove (minced)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the all-purpose flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
- Add cold water gradually and mix until a dough forms. Wrap in plastic wrap and refrigerate for 20 minutes.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the cherry tomatoes, balsamic vinegar, black pepper, and chopped basil. Cook for 5-7 minutes until the tomatoes are slightly softened and the mixture is fragrant.
- Remove the dough from the refrigerator and roll it out into a circle slightly larger than your skillet.
- In a 20 cm (8 inch) oven-safe skillet, arrange the cooked tomatoes evenly, cut side up. Pour any remaining liquid from the skillet over the tomatoes.
- Carefully place the rolled-out pastry over the tomatoes, tucking the edges down the sides of the skillet.
- Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown.
- Let cool for a few minutes, then carefully invert onto a serving plate. Serve warm.
