  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Puff pastry - 1 sheet (about 250 grams)
  • Fresh thyme - 2 sprigs

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté for 10 minutes until they start to soften.
  3. Stir in the brown sugar, balsamic vinegar, salt, and black pepper. Cook for an additional 15 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  4. Remove the skillet from heat and stir in the fresh thyme leaves. Spread the caramelized onions evenly over the bottom of a round oven-safe dish (about 20 cm in diameter).
  5. Roll out the puff pastry on a lightly floured surface and cut it into a circle slightly larger than the dish. Place the pastry over the onions, tucking the edges down around the sides.
  6. Make a few small slits in the pastry to allow steam to escape. Bake in the preheated oven for 20 minutes, or until the pastry is golden and puffed.
  7. Remove from the oven and let it cool for 5 minutes before carefully inverting onto a serving plate. Serve warm.
