Ingredients

  • apples - 2 medium (preferably Granny Smith or Honeycrisp)
  • brown sugar - 50 grams
  • coconut oil - 30 grams (melted)
  • all-purpose flour - 100 grams
  • vegan butter - 30 grams (cold)
  • water - 3 tablespoons
  • vanilla extract - 1 teaspoon
  • cinnamon - 1/2 teaspoon
  • salt - a pinch
  • lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Peel and core the apples, then cut them into quarters and toss them with lemon juice and cinnamon.
  3. In a skillet, combine the melted coconut oil and brown sugar over medium heat, stirring until the sugar dissolves and the mixture begins to bubble.
  4. Add the apple quarters to the skillet, arranging them in a circular pattern, and cook for 10 minutes until they begin to soften and caramelize.
  5. In a mixing bowl, combine the flour, cold vegan butter, and a pinch of salt. Use your fingers to work the butter into the flour until crumbly, then add water and vanilla extract to form a dough.
  6. Roll out the dough on a floured surface into a circle that fits your skillet, then carefully place it over the apples in the skillet.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
  8. Remove from the oven and let it cool for 5 minutes. Invert the tart onto a serving plate carefully.
  9. Slice and serve warm, optionally with a scoop of vegan ice cream.
