- brown sugar - 50 grams
- coconut oil - 30 grams (melted)
- all-purpose flour - 100 grams
- vegan butter - 30 grams (cold)
- water - 3 tablespoons
- vanilla extract - 1 teaspoon
- cinnamon - 1/2 teaspoon
- salt - a pinch
- lemon juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Peel and core the apples, then cut them into quarters and toss them with lemon juice and cinnamon.
- In a skillet, combine the melted coconut oil and brown sugar over medium heat, stirring until the sugar dissolves and the mixture begins to bubble.
- Add the apple quarters to the skillet, arranging them in a circular pattern, and cook for 10 minutes until they begin to soften and caramelize.
- In a mixing bowl, combine the flour, cold vegan butter, and a pinch of salt. Use your fingers to work the butter into the flour until crumbly, then add water and vanilla extract to form a dough.
- Roll out the dough on a floured surface into a circle that fits your skillet, then carefully place it over the apples in the skillet.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.
- Remove from the oven and let it cool for 5 minutes. Invert the tart onto a serving plate carefully.
- Slice and serve warm, optionally with a scoop of vegan ice cream.
