- All-purpose flour - 200 grams
- Warm water - 100 ml
- Active dry yeast - 5 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Zucchini - 100 grams, thinly sliced
- Red bell pepper - 1 small, diced
- Eggplant - 100 grams, diced
- Cherry tomatoes - 100 grams, halved
- Black olives - 50 grams, pitted and sliced
- Fresh thyme - 1 teaspoon, chopped
- Fresh basil - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
- Preheat the oven to 220°C (425°F).
- Once the dough has risen, punch it down and roll it out on a floured surface to fit a baking tray (about 30x20 cm).
- Transfer the rolled dough to the baking tray and spread it out evenly.
- In a bowl, mix the zucchini, red bell pepper, eggplant, cherry tomatoes, olives, thyme, and half of the basil. Season with salt and pepper to taste.
- Spread the vegetable mixture evenly over the dough, leaving a small border around the edges.
- Sprinkle the crumbled feta cheese on top of the vegetables.
- Bake in the preheated oven for about 20-25 minutes, or until the crust is golden and the vegetables are tender.
- Remove from the oven, garnish with the remaining fresh basil, slice, and serve hot.
