Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 1 small, diced
  • Eggplant - 100 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Black olives - 50 grams, pitted and sliced
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh basil - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes, or until doubled in size.
  5. Preheat the oven to 220°C (425°F).
  6. Once the dough has risen, punch it down and roll it out on a floured surface to fit a baking tray (about 30x20 cm).
  7. Transfer the rolled dough to the baking tray and spread it out evenly.
  8. In a bowl, mix the zucchini, red bell pepper, eggplant, cherry tomatoes, olives, thyme, and half of the basil. Season with salt and pepper to taste.
  9. Spread the vegetable mixture evenly over the dough, leaving a small border around the edges.
  10. Sprinkle the crumbled feta cheese on top of the vegetables.
  11. Bake in the preheated oven for about 20-25 minutes, or until the crust is golden and the vegetables are tender.
  12. Remove from the oven, garnish with the remaining fresh basil, slice, and serve hot.
