  • Whole wheat pizza dough - 200 grams
  • Zucchini - 100 grams, thinly sliced
  • Eggplant - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Yellow onion - 50 grams, thinly sliced
  • Garlic - 2 cloves, minced
  • Tomato sauce - 100 grams
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent, about 3-4 minutes.
  3. Add the diced eggplant, zucchini, and red bell pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Season with thyme, salt, and black pepper.
  4. Roll out the whole wheat pizza dough on a lightly floured surface to fit a 25 cm (10 inch) round baking sheet.
  5. Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
  6. Layer the sautéed ratatouille vegetables on top of the tomato sauce.
  7. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and crispy.
  8. Remove from the oven, garnish with fresh basil, slice, and serve warm.
