- Red bell pepper - 50 grams, diced
- Yellow onion - 50 grams, thinly sliced
- Garlic - 2 cloves, minced
- Tomato sauce - 100 grams
- Olive oil - 1 tablespoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - a handful, for garnish
Steps
- Preheat the oven to 220°C (428°F).
- In a large skillet, heat the olive oil over medium heat and sauté the onions and garlic until translucent, about 3-4 minutes.
- Add the diced eggplant, zucchini, and red bell pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Season with thyme, salt, and black pepper.
- Roll out the whole wheat pizza dough on a lightly floured surface to fit a 25 cm (10 inch) round baking sheet.
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges.
- Layer the sautéed ratatouille vegetables on top of the tomato sauce.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden brown and crispy.
- Remove from the oven, garnish with fresh basil, slice, and serve warm.
