  • All-purpose flour - 100 grams
  • Unsalted butter - 50 grams (cold and cubed)
  • Powdered sugar - 25 grams
  • Egg yolk - 1 large
  • Ice water - 2 tablespoons
  • Dark chocolate (70% cocoa) - 100 grams
  • Heavy cream - 200 milliliters
  • Vanilla extract - 1 teaspoon
  • Sugar - 15 grams
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine the flour, powdered sugar, and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  3. Add the egg yolk and ice water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  4. Roll out the chilled dough on a floured surface and line a 10 cm tart pan. Prick the bottom with a fork and bake for 15-20 minutes until golden. Let cool.
  5. While the crust cools, melt the dark chocolate in a bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  6. In a separate bowl, whip the heavy cream with sugar and vanilla extract until soft peaks form.
  7. Gently fold the melted chocolate into the whipped cream until fully combined.
  8. Pour the mousse into the cooled tart shell and smooth the top. Refrigerate for at least 30 minutes to set.
  9. Once set, slice and serve chilled, optionally garnished with chocolate shavings or fresh berries.
