- Cherry tomatoes - 100g, halved
- Fresh basil - 10g, chopped
- Black pepper - 1/4 tsp
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, egg, and salt. Mix until a dough forms.
- Press the dough into a 9-inch pie pan to form the crust, ensuring it is evenly distributed along the bottom and sides.
- Bake the crust in the preheated oven for 15 minutes or until lightly golden.
- While the crust is baking, prepare the filling by heating a small pan over medium heat and adding minced garlic. Sauté until fragrant.
- Add fresh spinach to the pan and cook until wilted, about 2-3 minutes.
- In a bowl, combine cooked spinach, coconut milk, black pepper, and chopped basil. Mix well.
- Once the crust is done, remove it from the oven and pour the coconut milk mixture into the crust.
- Top with halved cherry tomatoes.
- Return the tart to the oven and bake for an additional 20 minutes until set.
- Allow the tart to cool slightly before slicing and serving.
