  • Coconut oil - 30g
  • Egg - 1 large
  • Salt - 1/2 tsp
  • Coconut milk - 200ml
  • Garlic - 1 clove, minced
  • Fresh spinach - 100g
  • Cherry tomatoes - 100g, halved
  • Fresh basil - 10g, chopped
  • Black pepper - 1/4 tsp

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, egg, and salt. Mix until a dough forms.
  3. Press the dough into a 9-inch pie pan to form the crust, ensuring it is evenly distributed along the bottom and sides.
  4. Bake the crust in the preheated oven for 15 minutes or until lightly golden.
  5. While the crust is baking, prepare the filling by heating a small pan over medium heat and adding minced garlic. Sauté until fragrant.
  6. Add fresh spinach to the pan and cook until wilted, about 2-3 minutes.
  7. In a bowl, combine cooked spinach, coconut milk, black pepper, and chopped basil. Mix well.
  8. Once the crust is done, remove it from the oven and pour the coconut milk mixture into the crust.
  9. Top with halved cherry tomatoes.
  10. Return the tart to the oven and bake for an additional 20 minutes until set.
  11. Allow the tart to cool slightly before slicing and serving.
