- Almond flour - 150g
- Coconut oil - 30g, melted
- Egg - 1 large
- Salt - 1/2 tsp
- Water - 2 tbsp
- Mixed mushrooms (e.g., shiitake, cremini, oyster) - 200g, sliced
- Garlic - 2 cloves, minced
- Fresh thyme - 1 tsp, chopped
- Fresh parsley - 1 tbsp, chopped
- Olive oil - 1 tbsp
- Sea salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, egg, and salt. Mix until a dough forms.
- Add water, one tablespoon at a time, until the dough holds together. Press the dough into a greased 25cm (10-inch) tart pan evenly across the bottom and up the sides.
- Bake the crust in the preheated oven for 10-12 minutes or until lightly golden.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the sliced mushrooms, thyme, salt, and pepper to the skillet. Cook for 5-7 minutes until the mushrooms are tender and their moisture has evaporated.
- Remove the crust from the oven and let it cool for a few minutes.
- Spread the mushroom mixture evenly over the crust and sprinkle with fresh parsley.
- Return the tart to the oven and bake for an additional 10-15 minutes until heated through.
- Remove from the oven, let cool slightly, slice, and serve warm.
