- Water - 75 ml
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Raw cashews - 50 grams
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic powder - 1/2 teaspoon
- Onion - 1 medium, thinly sliced
- Mushrooms - 100 grams, thinly sliced
- Thyme - 1 teaspoon, fresh or dried
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (430°F).
- In a mixing bowl, combine the flour, water, olive oil, and salt. Knead until a smooth dough forms, then let it rest for 10 minutes.
- While the dough rests, soak the cashews in hot water for about 10 minutes, then drain.
- Blend the soaked cashews with nutritional yeast, lemon juice, garlic powder, and a pinch of salt until smooth and creamy. Add a little water if needed to reach a spreadable consistency.
- Roll out the dough on a floured surface to a rectangular shape, about 3 mm thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Spread the cashew cream evenly over the dough, leaving a small border around the edges.
- Top with thinly sliced onions, mushrooms, thyme, and season with black pepper.
- Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, slice, and serve warm.
