Ingredients

  • All-purpose flour - 150 grams
  • Water - 75 ml
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Raw cashews - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Onion - 1 medium, thinly sliced
  • Mushrooms - 100 grams, thinly sliced
  • Thyme - 1 teaspoon, fresh or dried
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (430°F).
  2. In a mixing bowl, combine the flour, water, olive oil, and salt. Knead until a smooth dough forms, then let it rest for 10 minutes.
  3. While the dough rests, soak the cashews in hot water for about 10 minutes, then drain.
  4. Blend the soaked cashews with nutritional yeast, lemon juice, garlic powder, and a pinch of salt until smooth and creamy. Add a little water if needed to reach a spreadable consistency.
  5. Roll out the dough on a floured surface to a rectangular shape, about 3 mm thick.
  6. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  7. Spread the cashew cream evenly over the dough, leaving a small border around the edges.
  8. Top with thinly sliced onions, mushrooms, thyme, and season with black pepper.
  9. Bake in the preheated oven for about 15-20 minutes, or until the crust is golden and crispy.
  10. Remove from the oven, slice, and serve warm.
