  • Egg - 1 large
  • Mozzarella cheese - 100 grams, shredded
  • Cream cheese - 50 grams, softened
  • Bacon - 100 grams, chopped
  • Onion - 1 small, thinly sliced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh thyme - 1 teaspoon, chopped (optional)

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a mixing bowl, combine the almond flour, egg, 50 grams mozzarella cheese, and salt to form a dough.
  3. Place the dough between two sheets of parchment paper and roll it out to a thin rectangle (about 0.5 cm thick).
  4. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  5. In a skillet, heat olive oil over medium heat and sauté the chopped bacon until crispy, then add the sliced onion and cook until softened.
  6. Spread the softened cream cheese evenly over the dough, leaving a small border around the edges.
  7. Top the cream cheese with the bacon and onion mixture, then sprinkle the remaining mozzarella cheese on top.
  8. Season with black pepper and thyme if using.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbly.
  10. Remove from the oven, let cool slightly, then slice and serve warm.
