Steps
- Preheat your oven to 220°C (428°F).
- In a mixing bowl, combine the almond flour, egg, 50 grams mozzarella cheese, and salt to form a dough.
- Place the dough between two sheets of parchment paper and roll it out to a thin rectangle (about 0.5 cm thick).
- Transfer the rolled-out dough to a baking sheet lined with parchment paper.
- In a skillet, heat olive oil over medium heat and sauté the chopped bacon until crispy, then add the sliced onion and cook until softened.
- Spread the softened cream cheese evenly over the dough, leaving a small border around the edges.
- Top the cream cheese with the bacon and onion mixture, then sprinkle the remaining mozzarella cheese on top.
- Season with black pepper and thyme if using.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden and the cheese is bubbly.
