- Zucchini - 250 grams
- Almond flour - 50 grams
- Egg - 1 large
- Parmesan cheese - 30 grams, grated
- Mozzarella cheese - 100 grams, shredded
- Cherry tomatoes - 100 grams, halved
- Bell pepper - 50 grams, diced
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - a few leaves, for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Grate the zucchini and place it in a clean kitchen towel, squeezing out excess moisture.
- In a mixing bowl, combine the grated zucchini, almond flour, egg, Parmesan cheese, salt, pepper, and dried oregano. Mix well to form a dough.
- Line a baking sheet with parchment paper and spread the zucchini dough into a round pizza shape, about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
- While the crust is baking, sauté the minced garlic in olive oil over medium heat for 1-2 minutes until fragrant.
- Add the diced bell pepper and cherry tomatoes to the pan and cook for another 3-4 minutes until softened.
- Remove the crust from the oven and spread the sautéed vegetables evenly over the top.
- Sprinkle the shredded mozzarella cheese over the vegetables.
- Return the tarte to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh basil, slice, and serve warm.
