Ingredients

  • Zucchini - 250 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Parmesan cheese - 30 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Cherry tomatoes - 100 grams, halved
  • Bell pepper - 50 grams, diced
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - a few leaves, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Grate the zucchini and place it in a clean kitchen towel, squeezing out excess moisture.
  3. In a mixing bowl, combine the grated zucchini, almond flour, egg, Parmesan cheese, salt, pepper, and dried oregano. Mix well to form a dough.
  4. Line a baking sheet with parchment paper and spread the zucchini dough into a round pizza shape, about 1 cm thick.
  5. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
  6. While the crust is baking, sauté the minced garlic in olive oil over medium heat for 1-2 minutes until fragrant.
  7. Add the diced bell pepper and cherry tomatoes to the pan and cook for another 3-4 minutes until softened.
  8. Remove the crust from the oven and spread the sautéed vegetables evenly over the top.
  9. Sprinkle the shredded mozzarella cheese over the vegetables.
  10. Return the tarte to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  11. Remove from the oven, garnish with fresh basil, slice, and serve warm.
