- Almond flour - 150g
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Ground black pepper - 1/4 teaspoon
- Fresh goat cheese - 100g
- Zucchini - 100g, thinly sliced
- Cherry tomatoes - 100g, halved
- Fresh basil leaves - 10g, chopped
- Garlic - 1 clove, minced
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, egg, olive oil, salt, and black pepper to form the dough.
- Press the dough into a 25cm (10-inch) round pizza pan to form a crust.
- Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden.
- While the crust is baking, prepare the toppings: In a bowl, mix together the goat cheese, minced garlic, basil, and a pinch of salt.
- After the crust is done, spread the goat cheese mixture evenly over the crust.
- Arrange the sliced zucchini and halved cherry tomatoes on top of the cheese.
- Return the tarte to the oven and bake for an additional 15 minutes, or until the vegetables are tender.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
