- Whole wheat flour - 100 grams
- Olive oil - 50 milliliters
- Water - 30 milliliters
- Salt - 1/4 teaspoon
- Beetroot - 200 grams, cooked and diced
- Cashews - 100 grams, soaked for 4 hours and drained
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic powder - 1/2 teaspoon
- Onion powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine whole wheat flour, olive oil, water, and salt. Mix until a dough forms.
- Knead the dough gently on a floured surface for 2-3 minutes, then roll it out to fit a 20 cm tart pan.
- Press the dough into the tart pan and trim any excess. Poke the bottom with a fork to prevent bubbling.
- Blind bake the crust in the oven for 15 minutes until lightly golden.
- In a blender, combine soaked and drained cashews, nutritional yeast, lemon juice, garlic powder, onion powder, and black pepper. Blend until smooth and creamy.
- Remove the crust from the oven and let it cool slightly.
- Spread the creamy cashew mixture evenly over the tart crust.
- Top with the diced cooked beetroot, spreading it evenly over the cashew filling.
- Return the tart to the oven and bake for an additional 25 minutes.
- Once done, remove from the oven and let cool for 5 minutes before slicing.
- Garnish with fresh parsley and serve warm.
