Ingredients

  • Whole wheat flour - 100 grams
  • Olive oil - 50 milliliters
  • Water - 30 milliliters
  • Salt - 1/4 teaspoon
  • Beetroot - 200 grams, cooked and diced
  • Cashews - 100 grams, soaked for 4 hours and drained
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Onion powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine whole wheat flour, olive oil, water, and salt. Mix until a dough forms.
  3. Knead the dough gently on a floured surface for 2-3 minutes, then roll it out to fit a 20 cm tart pan.
  4. Press the dough into the tart pan and trim any excess. Poke the bottom with a fork to prevent bubbling.
  5. Blind bake the crust in the oven for 15 minutes until lightly golden.
  6. In a blender, combine soaked and drained cashews, nutritional yeast, lemon juice, garlic powder, onion powder, and black pepper. Blend until smooth and creamy.
  7. Remove the crust from the oven and let it cool slightly.
  8. Spread the creamy cashew mixture evenly over the tart crust.
  9. Top with the diced cooked beetroot, spreading it evenly over the cashew filling.
  10. Return the tart to the oven and bake for an additional 25 minutes.
  11. Once done, remove from the oven and let cool for 5 minutes before slicing.
  12. Garnish with fresh parsley and serve warm.
