Ingredients

  • Almond flour - 150g
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Water - 50ml
  • Salt - 1/2 teaspoon
  • Fresh tomatoes - 200g, sliced
  • Fresh basil - 10g, chopped
  • Garlic - 1 clove, minced
  • Mozzarella cheese - 100g, shredded
  • Black pepper - to taste
  • Balsamic glaze - for drizzling

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour and salt, then add the egg and olive oil. Mix until a dough forms.
  3. Gradually add water, mixing until the dough is smooth and pliable.
  4. Press the dough into a 25cm (10-inch) tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  5. Bake the crust in the preheated oven for 10 minutes until lightly golden.
  6. Meanwhile, prepare the toppings by mixing sliced tomatoes, minced garlic, chopped basil, salt, and black pepper in a bowl.
  7. Once the crust is baked, remove it from the oven and layer the tomato mixture evenly over the crust.
  8. Sprinkle shredded mozzarella cheese on top of the tomatoes.
  9. Return the tart to the oven and bake for an additional 20-25 minutes until the cheese is bubbly and golden.
  10. Remove from the oven and let cool slightly. Drizzle with balsamic glaze before serving.
