Ingredients

  • All-purpose flour - 150g
  • Olive oil - 60ml
  • Cold water - 50ml
  • Salt - 1/2 tsp
  • Red bell pepper - 1 medium, sliced
  • Yellow bell pepper - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 tsp, chopped
  • Fresh basil - 1 tbsp, chopped
  • Black pepper - to taste
  • Nutritional yeast - 2 tbsp (optional)
  • Balsamic vinegar - 1 tsp

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the all-purpose flour and salt. Add the olive oil and mix until crumbly.
  3. Gradually add cold water, mixing until a dough forms. Knead briefly, then wrap in plastic and refrigerate for 15 minutes.
  4. While the dough chills, prepare the filling. In a skillet, heat a tablespoon of olive oil over medium heat and sauté the minced garlic for 1 minute until fragrant.
  5. Add the sliced red and yellow bell peppers to the skillet, season with black pepper, and sauté for about 10 minutes until softened.
  6. Stir in the chopped thyme and basil, and remove from heat. Drizzle with balsamic vinegar and mix well.
  7. Roll out the chilled dough on a floured surface into a circle about 0.5 cm thick. Transfer to a baking sheet lined with parchment paper.
  8. Spread the pepper filling evenly over the dough, leaving a small border around the edges.
  9. Sprinkle nutritional yeast on top if using, then fold the edges of the dough over slightly to create a crust.
  10. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
  11. Remove from the oven, allow to cool slightly, slice, and serve warm.
