- All-purpose flour - 150g
- Olive oil - 60ml
- Cold water - 50ml
- Salt - 1/2 tsp
- Red bell pepper - 1 medium, sliced
- Yellow bell pepper - 1 medium, sliced
- Garlic - 2 cloves, minced
- Fresh thyme - 1 tsp, chopped
- Fresh basil - 1 tbsp, chopped
- Black pepper - to taste
- Nutritional yeast - 2 tbsp (optional)
- Balsamic vinegar - 1 tsp
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the all-purpose flour and salt. Add the olive oil and mix until crumbly.
- Gradually add cold water, mixing until a dough forms. Knead briefly, then wrap in plastic and refrigerate for 15 minutes.
- While the dough chills, prepare the filling. In a skillet, heat a tablespoon of olive oil over medium heat and sauté the minced garlic for 1 minute until fragrant.
- Add the sliced red and yellow bell peppers to the skillet, season with black pepper, and sauté for about 10 minutes until softened.
- Stir in the chopped thyme and basil, and remove from heat. Drizzle with balsamic vinegar and mix well.
- Roll out the chilled dough on a floured surface into a circle about 0.5 cm thick. Transfer to a baking sheet lined with parchment paper.
- Spread the pepper filling evenly over the dough, leaving a small border around the edges.
- Sprinkle nutritional yeast on top if using, then fold the edges of the dough over slightly to create a crust.
- Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
- Remove from the oven, allow to cool slightly, slice, and serve warm.
