Steps
- Preheat the oven to 180°C (350°F).
- Roll out the shortcrust pastry and line a 20 cm tart pan, trimming any excess pastry from the edges.
- In a skillet, heat the olive oil over medium heat and sauté the sliced leeks until soft and translucent, about 10 minutes. Season with salt and pepper.
- In a mixing bowl, whisk together the eggs, heavy cream, milk, grated Gruyère cheese, nutmeg, and additional salt and pepper to taste.
- Spread the sautéed leeks evenly over the pastry base.
- Pour the egg and cream mixture over the leeks, ensuring they are well covered.
- Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is lightly golden.
