  • Milk - 50 milliliters
  • Gruyère cheese - 100 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the shortcrust pastry and line a 20 cm tart pan, trimming any excess pastry from the edges.
  3. In a skillet, heat the olive oil over medium heat and sauté the sliced leeks until soft and translucent, about 10 minutes. Season with salt and pepper.
  4. In a mixing bowl, whisk together the eggs, heavy cream, milk, grated Gruyère cheese, nutmeg, and additional salt and pepper to taste.
  5. Spread the sautéed leeks evenly over the pastry base.
  6. Pour the egg and cream mixture over the leeks, ensuring they are well covered.
  7. Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is lightly golden.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
