  • Puff pastry - 200 grams
  • Fresh spinach - 200 grams
  • Eggs - 3 large
  • Feta cheese - 100 grams, crumbled
  • Greek yogurt - 50 grams
  • Garlic - 1 clove, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 1 tablespoon
  • Nutmeg - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, whisk together the eggs, Greek yogurt, crumbled feta cheese, nutmeg, salt, and pepper.
  5. Stir in the cooled spinach mixture into the egg mixture until well combined.
  6. Roll out the puff pastry and fit it into a 20 cm (8 inch) tart pan, trimming the edges as necessary.
  7. Pour the spinach and egg mixture into the pastry-lined tart pan, spreading it evenly.
  8. Bake in the preheated oven for 25-30 minutes or until the filling is set and the top is golden.
  9. Allow the tart to cool for a few minutes before slicing and serving.
