- Maple syrup - 30g
- Salt - a pinch
- Cold water - 2-3 tablespoons
- Ripe peaches - 2 medium, sliced
- Almond milk - 100ml
- Cornstarch - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Agave syrup - 1 tablespoon (for drizzling)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the all-purpose flour and a pinch of salt.
- Add the solid coconut oil to the flour and mix until the mixture resembles coarse crumbs.
- Stir in the maple syrup and mix well, then gradually add cold water, one tablespoon at a time, until the dough comes together.
- Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 15 minutes.
- While the dough is chilling, prepare the peach filling. In a small saucepan, combine the almond milk, cornstarch, vanilla extract, and cinnamon. Heat over medium heat, stirring continuously until it thickens slightly.
- Remove from heat and fold in the sliced peaches gently.
- Roll out the chilled dough on a floured surface to fit a small tart pan (approximately 20cm in diameter).
- Place the rolled dough into the tart pan, trimming any excess, and prick the bottom with a fork.
- Pour the peach filling into the tart shell, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Allow to cool slightly, then drizzle with agave syrup before serving.
