  • All-purpose flour - 100g
  • Coconut oil (solid) - 50g
  • Maple syrup - 30g
  • Salt - a pinch
  • Cold water - 2-3 tablespoons
  • Ripe peaches - 2 medium, sliced
  • Almond milk - 100ml
  • Cornstarch - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Agave syrup - 1 tablespoon (for drizzling)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the all-purpose flour and a pinch of salt.
  3. Add the solid coconut oil to the flour and mix until the mixture resembles coarse crumbs.
  4. Stir in the maple syrup and mix well, then gradually add cold water, one tablespoon at a time, until the dough comes together.
  5. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 15 minutes.
  6. While the dough is chilling, prepare the peach filling. In a small saucepan, combine the almond milk, cornstarch, vanilla extract, and cinnamon. Heat over medium heat, stirring continuously until it thickens slightly.
  7. Remove from heat and fold in the sliced peaches gently.
  8. Roll out the chilled dough on a floured surface to fit a small tart pan (approximately 20cm in diameter).
  9. Place the rolled dough into the tart pan, trimming any excess, and prick the bottom with a fork.
  10. Pour the peach filling into the tart shell, spreading it evenly.
  11. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  12. Allow to cool slightly, then drizzle with agave syrup before serving.
