Ingredients
- Whole wheat flour - 100 grams
- Olive oil - 30 ml
- Cold water - 30 ml
- Onions (thinly sliced) - 300 grams
- Garlic (minced) - 1 clove
- Thyme (fresh or dried) - 1 teaspoon
- Egg - 1 large
- Greek yogurt - 50 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese (grated) - 30 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, combine whole wheat flour and salt. Add olive oil and mix until crumbly. Gradually add cold water until a dough forms. Wrap in plastic wrap and refrigerate for 15 minutes.
- In a large skillet, heat a little olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized (about 15-20 minutes). Add minced garlic and thyme, cooking for another 2 minutes. Remove from heat.
- In a bowl, whisk together the egg, Greek yogurt, salt, and black pepper until smooth. Stir in the caramelized onion mixture.
- Roll out the chilled dough on a lightly floured surface to fit a 20cm tart pan. Place the dough in the pan and trim any excess.
- Pour the onion mixture into the prepared crust and spread evenly. Sprinkle grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the tart is golden brown and set.
- Allow to cool slightly before slicing. Serve warm or at room temperature.
