Ingredients

  • Whole wheat flour - 100 grams
  • Olive oil - 30 ml
  • Cold water - 30 ml
  • Onions (thinly sliced) - 300 grams
  • Garlic (minced) - 1 clove
  • Thyme (fresh or dried) - 1 teaspoon
  • Egg - 1 large
  • Greek yogurt - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parmesan cheese (grated) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, combine whole wheat flour and salt. Add olive oil and mix until crumbly. Gradually add cold water until a dough forms. Wrap in plastic wrap and refrigerate for 15 minutes.
  3. In a large skillet, heat a little olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until they are caramelized (about 15-20 minutes). Add minced garlic and thyme, cooking for another 2 minutes. Remove from heat.
  4. In a bowl, whisk together the egg, Greek yogurt, salt, and black pepper until smooth. Stir in the caramelized onion mixture.
  5. Roll out the chilled dough on a lightly floured surface to fit a 20cm tart pan. Place the dough in the pan and trim any excess.
  6. Pour the onion mixture into the prepared crust and spread evenly. Sprinkle grated Parmesan cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the tart is golden brown and set.
  8. Allow to cool slightly before slicing. Serve warm or at room temperature.
