  • Whole wheat flour - 100 grams
  • Butter - 30 grams (cold and cubed)
  • Cold water - 2 tablespoons
  • Mirabelle plums - 250 grams (pitted and halved)
  • Honey - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Almond extract - 1/4 teaspoon
  • Egg - 1 (beaten, for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the whole wheat flour and cold cubed butter. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  3. Add cold water a little at a time, mixing gently until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. While the dough chills, prepare the filling by mixing the pitted mirabelle plums, honey, cinnamon, and almond extract in a separate bowl. Set aside.
  5. Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Gently press the dough into the pan and trim the edges.
  6. Pour the mirabelle mixture into the tart shell, spreading it evenly.
  7. Brush the edges of the tart crust with the beaten egg for a golden finish.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the plums are tender.
  9. Allow to cool slightly before serving. Enjoy warm or at room temperature.
