- Almond extract - 1/4 teaspoon
- Egg - 1 (beaten, for egg wash)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the whole wheat flour and cold cubed butter. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- Add cold water a little at a time, mixing gently until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
- While the dough chills, prepare the filling by mixing the pitted mirabelle plums, honey, cinnamon, and almond extract in a separate bowl. Set aside.
- Roll out the chilled dough on a floured surface to fit a 20 cm tart pan. Gently press the dough into the pan and trim the edges.
- Pour the mirabelle mixture into the tart shell, spreading it evenly.
- Brush the edges of the tart crust with the beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the plums are tender.
- Allow to cool slightly before serving. Enjoy warm or at room temperature.
