Ingredients

  • Puff pastry - 250 grams
  • Zucchini - 100 grams, thinly sliced
  • Red bell pepper - 50 grams, diced
  • Artichoke hearts - 100 grams, quartered
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Grated Parmesan cheese - 50 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to fit a tart pan and press it into the pan, trimming any excess dough.
  3. Prick the bottom of the pastry with a fork and place it in the refrigerator for 10 minutes to chill.
  4. In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the zucchini, red bell pepper, and artichoke hearts to the skillet and cook for 5-7 minutes until slightly softened.
  6. Stir in the cherry tomatoes, oregano, thyme, salt, and pepper, and cook for another 2-3 minutes.
  7. Remove the skillet from heat and stir in the fresh parsley and lemon juice.
  8. Spread the vegetable mixture evenly over the chilled puff pastry.
  9. Sprinkle grated Parmesan cheese over the top of the vegetables.
  10. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and puffed.
  11. Allow to cool slightly before slicing and serve warm or at room temperature.
