- Zucchini - 100 grams, thinly sliced
- Red bell pepper - 50 grams, diced
- Artichoke hearts - 100 grams, quartered
- Cherry tomatoes - 100 grams, halved
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Grated Parmesan cheese - 50 grams
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to fit a tart pan and press it into the pan, trimming any excess dough.
- Prick the bottom of the pastry with a fork and place it in the refrigerator for 10 minutes to chill.
- In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.
- Add the zucchini, red bell pepper, and artichoke hearts to the skillet and cook for 5-7 minutes until slightly softened.
- Stir in the cherry tomatoes, oregano, thyme, salt, and pepper, and cook for another 2-3 minutes.
- Remove the skillet from heat and stir in the fresh parsley and lemon juice.
- Spread the vegetable mixture evenly over the chilled puff pastry.
- Sprinkle grated Parmesan cheese over the top of the vegetables.
- Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and puffed.
- Allow to cool slightly before slicing and serve warm or at room temperature.
