Ingredients

  • Almond flour - 150g
  • Coconut oil - 60g, melted
  • Maple syrup - 30g
  • Salt - 1/4 teaspoon
  • Raspberries - 200g, fresh or frozen
  • Cornstarch - 20g
  • Agave syrup - 20g (adjust based on sweetness preference)
  • Lemon juice - 1 tablespoon
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.
  3. Press the dough evenly into the bottom and up the sides of a 20cm (8-inch) tart pan. Prick the bottom with a fork to prevent bubbling.
  4. Bake the crust for 15-20 minutes or until lightly golden. Set aside to cool.
  5. In a separate bowl, mix the raspberries, cornstarch, agave syrup, lemon juice, and vanilla extract gently to combine.
  6. Pour the raspberry mixture into the cooled tart crust, spreading it evenly.
  7. Bake the tart for an additional 20 minutes, or until the raspberries are bubbling and the filling has slightly thickened.
  8. Remove from the oven and let cool for at least 10 minutes before serving.
