Ingredients

  • Almond flour - 120g
  • Coconut oil - 30g (melted)
  • Honey - 30g
  • Sea salt - 1/4 tsp
  • Coconut milk - 100ml (full-fat)
  • Vanilla extract - 1 tsp
  • Strawberries - 200g (sliced)
  • Lemon juice - 1 tbsp

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey, and sea salt until a dough forms.
  3. Press the dough into the bottom and up the sides of a 20cm tart pan evenly.
  4. Bake the crust in the preheated oven for 15 minutes or until lightly golden.
  5. While the crust is baking, mix coconut milk, vanilla extract, and lemon juice in a bowl until well combined.
  6. Once the crust is done, let it cool for 10 minutes, then pour the coconut mixture into the crust.
  7. Arrange sliced strawberries on top of the coconut filling.
  8. Refrigerate the tart for at least 20 minutes to set before serving.
