- Almond flour - 120g
- Coconut oil - 30g (melted)
- Honey - 30g
- Sea salt - 1/4 tsp
- Coconut milk - 100ml (full-fat)
- Vanilla extract - 1 tsp
- Strawberries - 200g (sliced)
- Lemon juice - 1 tbsp
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, honey, and sea salt until a dough forms.
- Press the dough into the bottom and up the sides of a 20cm tart pan evenly.
- Bake the crust in the preheated oven for 15 minutes or until lightly golden.
- While the crust is baking, mix coconut milk, vanilla extract, and lemon juice in a bowl until well combined.
- Once the crust is done, let it cool for 10 minutes, then pour the coconut mixture into the crust.
- Arrange sliced strawberries on top of the coconut filling.
- Refrigerate the tart for at least 20 minutes to set before serving.
