- Whole wheat pastry flour - 150 grams
- Olive oil - 2 tablespoons
- Water - 50 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh thyme - 1 teaspoon, chopped
- Garlic - 1 clove, minced
- Egg - 1 large
- Low-fat ricotta cheese - 100 grams
- Parmesan cheese - 30 grams, grated
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine the whole wheat pastry flour and salt. Gradually mix in the olive oil and water until a dough forms. Knead gently for a minute, then wrap in plastic wrap and let rest for 15 minutes.
- Roll out the dough on a floured surface to fit a 24 cm (9 inch) tart pan. Press the dough into the pan and trim the edges.
- In another bowl, combine the ricotta cheese, egg, minced garlic, thyme, black pepper, and half of the grated Parmesan cheese. Mix until smooth.
- Spread the ricotta mixture over the pastry base evenly.
- Layer the sliced zucchini over the ricotta mixture in a circular pattern. Sprinkle the remaining grated Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until the zucchini is tender and the pastry is golden brown.
- Remove from the oven and let cool for a few minutes before slicing. Serve warm.
