Ingredients
- Whole wheat puff pastry - 1 sheet (about 250g)
- Mixed mushrooms (button, shiitake, and cremini) - 200g, sliced
- Shallot - 1 small, finely chopped
- Garlic - 1 clove, minced
- Fresh thyme - 1 teaspoon, chopped
- Low-fat cream cheese - 50g
- Olive oil - 1 tablespoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
- Parmesan cheese - 20g, grated (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a skillet, heat olive oil over medium heat and sauté the shallot until translucent.
- Add minced garlic and sliced mushrooms to the skillet, and cook until the mushrooms are tender and most of the moisture has evaporated, about 7-10 minutes.
- Stir in chopped thyme, salt, and pepper, and cook for another minute. Remove from heat and let cool slightly.
- On a lightly floured surface, roll out the whole wheat puff pastry to fit a 20cm (8-inch) tart pan. Press the pastry into the pan and trim any excess.
- Spread the low-fat cream cheese evenly over the base of the pastry.
- Spoon the sautéed mushroom mixture over the cream cheese, spreading it evenly.
- If desired, sprinkle grated Parmesan cheese on top of the mushrooms.
- Brush the edges of the pastry with the beaten egg.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
- Allow to cool slightly before slicing. Serve warm or at room temperature.
