Ingredients

  • Whole wheat puff pastry - 1 sheet (about 250g)
  • Mixed mushrooms (button, shiitake, and cremini) - 200g, sliced
  • Shallot - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Low-fat cream cheese - 50g
  • Olive oil - 1 tablespoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)
  • Parmesan cheese - 20g, grated (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a skillet, heat olive oil over medium heat and sauté the shallot until translucent.
  3. Add minced garlic and sliced mushrooms to the skillet, and cook until the mushrooms are tender and most of the moisture has evaporated, about 7-10 minutes.
  4. Stir in chopped thyme, salt, and pepper, and cook for another minute. Remove from heat and let cool slightly.
  5. On a lightly floured surface, roll out the whole wheat puff pastry to fit a 20cm (8-inch) tart pan. Press the pastry into the pan and trim any excess.
  6. Spread the low-fat cream cheese evenly over the base of the pastry.
  7. Spoon the sautéed mushroom mixture over the cream cheese, spreading it evenly.
  8. If desired, sprinkle grated Parmesan cheese on top of the mushrooms.
  9. Brush the edges of the pastry with the beaten egg.
  10. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  11. Allow to cool slightly before slicing. Serve warm or at room temperature.
