- Fresh cherries - 300 grams, pitted and halved
- Cornstarch - 1 tablespoon
- Brown sugar - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Lemon juice - 1 teaspoon
Steps
- In a mixing bowl, combine the flour and salt. Add the solid coconut oil and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Stir in the maple syrup and cold water until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C (350°F). Roll out the chilled dough on a floured surface to fit a 20 cm (8-inch) tart pan. Press the dough into the pan and trim the edges.
- In a bowl, combine the pitted cherries, cornstarch, brown sugar, vanilla extract, and lemon juice. Mix well until the cherries are evenly coated.
- Pour the cherry mixture into the prepared tart shell, spreading it evenly.
- Bake the tart in the preheated oven for 25-30 minutes, or until the crust is golden and the cherries are bubbling.
- Remove from the oven and allow to cool slightly before slicing. Serve warm or at room temperature.
