- Cashews - 50 grams, soaked for 2 hours
- Nutritional yeast - 15 grams
- Lemon juice - 15 milliliters
- Garlic powder - 2 grams
- Dried thyme - 2 grams
- Black pepper - 1 gram
- Fresh parsley - for garnish
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes.
- Preheat the oven to 200°C (400°F).
- While the dough is rising, toss the sliced carrots with a drizzle of olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven for 20 minutes until tender and slightly caramelized.
- In a blender, combine soaked cashews, nutritional yeast, lemon juice, garlic powder, dried thyme, and a pinch of salt. Blend until smooth and creamy, adding a little water if necessary to reach a spreadable consistency.
- Once the dough has risen, roll it out on a floured surface to fit a baking tray. Transfer the dough to the prepared tray.
- Spread the cashew sauce evenly over the dough, then top with the roasted carrots.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.
