  • Olive oil - 15 milliliters
  • Salt - 5 grams
  • Carrots - 200 grams, thinly sliced
  • Cashews - 50 grams, soaked for 2 hours
  • Nutritional yeast - 15 grams
  • Lemon juice - 15 milliliters
  • Garlic powder - 2 grams
  • Dried thyme - 2 grams
  • Black pepper - 1 gram
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine whole wheat flour and salt. Add the yeast mixture and olive oil, and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes.
  4. Preheat the oven to 200°C (400°F).
  5. While the dough is rising, toss the sliced carrots with a drizzle of olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven for 20 minutes until tender and slightly caramelized.
  6. In a blender, combine soaked cashews, nutritional yeast, lemon juice, garlic powder, dried thyme, and a pinch of salt. Blend until smooth and creamy, adding a little water if necessary to reach a spreadable consistency.
  7. Once the dough has risen, roll it out on a floured surface to fit a baking tray. Transfer the dough to the prepared tray.
  8. Spread the cashew sauce evenly over the dough, then top with the roasted carrots.
  9. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.
